Do you say "tajine" or "tajine"? Frankly, we're not sure... but once it's on the plate, what does it matter? In this version, lamb meatballs are replaced by seitan (from Renski)a soft, rich-tasting wheat protein-based product. Originating in the Maghreb, the tajine was designed to simmer gently in a terracotta vessel with a pointed top. Here, the seitan is infused with spices, melting prunes and a fragrant sauce that perfumes the entire kitchen. So, even if we can't deliver the whole thing in the traditional container, we've made a point of respecting its spirit. Rustic, generous and vegetal... In short, "the" or "la", it's what's inside that counts!

🍷 Syrah AOC Valais, Cave Maurice Zufferey
This Valais Syrah has a dark purple color and offers aromatic complexity with notes of blackcurrant, black berry, pepper, clove and garrigue herbs. Its freshness and solid tannins pair perfectly with the rich, spicy flavors of tagine, balancing the sweet notes of prunes and the warm spice of cardamom.

If you've got an iron fist (or are looking for an excuse to build up your forearms), grab the jar firmly with one hand, the lid with the other... and turn with determination !

Take a round-tipped knifeslide it into the gap between the lid and the glass and lever gently. A little "pop" and it's open!

🔨 The "shock" method (when diplomacy fails) 😆)

If your work surface (or board) is safe, gently tap the lid on the surface. The air will permeate, a little "pop" will be heard, and your jar opens as if by magic !
