Savoury Recipe - Thai Vegetable Salad

What better way to prepare for spring than with a delicious salad featuring seasonal vegetables?

For the occasion, here's a salad recipe with Asian flavors, rich in fragrance. Ginger and Basil bring a touch of freshness and a return to Asia for the duration of your meal.

Thai Vegetable Salad

Ingredients

180g White cabbage
260g Orange and yellow carrots
1 Cucumber
1 Black radish (small)
100g Edamame
4 Eggs
30g Ginger
40g Basil
220g Red Quinoa
2 tablespoons Sesame oil
2 tbsp Rice vinegar
2 tbsp Soy sauce
1 tbsp Honey
10g Sesame seeds

 

Instructions

Step 1/9

Peel all the vegetables and bring two lightly salted saucepans to the boil.

 

Step 2/9

In the meantime, cut the cabbage, carrots, cucumber, black radish and red radish into thin slices using a vegetable slicer.

 

Step 3/9

Cook the quinoa in the first saucepan over medium heat according to package instructions (usually 10 minutes), leave to swell for 5 minutes, then drain and cool under cold water.

Set aside in a cool place.

 

Step 4/9

Cook the cabbage, carrots and edamame in the second pan for about 5 minutes (they should remain crunchy).

Cool in cold water and set aside in a cool place.

Be careful to keep the water in the vegetables.

 

Step 5/9

Cook the eggs for 12 min in the boiling vegetable water, then cool and shell them.

 

Step 6/9

Make the Asian sauce by mixing the sesame oil, rice vinegar, salt and pepper. Soy sauce, the Honey and peeled, chopped ginger.

Divide the sauce into two parts.

 

Step 7/9

Season the quinoa with the first part of the sauce, the second part and the third part. Salt and pepper.

 

Step 8/9

Combine all the vegetables in a salad bowl and season with the remaining sauce, then add the Basil lightly crushed before seasoning with Salt and pepper.

 

Step 9/9

In a bowl or large plate, spread the quinoa, then arrange the vegetable mixture and sprinkle with sesame seeds.

Finish by adding the halved egg, and repeat with the next portions.
