Salted recipe - Focaccia sandwich with mortadelle & grilled vegetables

I prepare these sandwiches with mortadelle, homemade Mayo and grilled vegetables, but you are free to put what you find in the fridge: a pesto of Basil, Remains of vegetables, a burrata and a few tomatoes offer good alternatives all as delicious!
Material: a 22cm square mold for a very thick focaccia.

Ingredients
- Focaccia -
500g | White flour |
320g | Water |
80g (+30g) | Olive oil |
10g | Salt |
14g | Fresh yeast |

1 tbsp | Provence herbs |
2 | Egg yolks |
1 tbsp | Dijon Mustard |
15cl | Rapeseed oil |

Instructions
Stage 1/6
Prepare the Focaccia. By hand or in the bowl of a kneader robot with the hook, mix the flour, water and the 80 grams of olive oil until the dough is homogeneous, about 5 minutes.
Then add it Salt On one side, the yeast on the other, and knead 5 minutes.
Let stand for 15 minutes.
Stage 2/6
Add the remaining 30g of olive oil, and continue to knead at low speed, then increase a little until the dough is smooth and sticky.
Place the dough in a previously oiled mold, cover with an oiled cling film and let rise for 1:30 to 2 hours in a warm place.
The dough should double in height.
Step 3/6
Preheat the oven to 180 ° C, add the herbs and bake 35 to 40 minutes.
Step 4/6
Garnish the sandwiches. Preheat the oven in grill mode at 200 ° C.
Cut eggplant slices and zucchini lengthwise.
Spread them on a baking sheet covered with parchment paper,Add a drizzle of olive oil, a pinch of Provence herbs then salt and pepper.
Bake for ten minutes.

Step 5/6
In a bowl, kill the egg yolks, mustard, and a pinch of Salt And pepper while gradually pouring the oil into a thin net to obtain mayonnaise.
Finish by adding the Provence herbs, lemon zest and the juice half of the lemon.
Step 6/6
Cut beautiful slices in the Foccacia (free to you toaster or not).
Brush with mayonnaise then decorate with grilled vegetables, mortadelle slices, some tomatoes and young salad shoots.
